Advice on Dating Neighbor

In a bit of an interesting situation and I need some advice on handling a neighbor that's interested in me.

Background:

We both moved from the same area in a similar timeframe. She ended up moving to my complex about 6 months ago and lives two doors down. Susie (the name we'll use) is very attractive and she had been watching me for a week or two before we bumped into each other on the elevator. Susie commented on how she loved my car and noticed my out of state tags. She mentions she's from the same state and made basic small talk.

Fast forward several months and we bump into each other here and there (completely different work schedules). She always goes out of her way to speak, and I've seen two or three guys leave her place in the AM. She has a roommate though so I'm not sure who they were seeing.

Sunday, she comes across me on a dating app and swipes. We match and she messages me instantly and has been engaged since. I didn't recognize her at first until I went to her IG (listed in bio) and seen pics of our complex. She seems fairly interested and has been very easy going. I went ahead and invited her out for wine to which she stated food would be the better option as she's taking a break from drinking until a festival here later this month.

We're meeting this weekend.

Any advice would be helpful on engaging with her since she lives so close. I know this is dangerous territory and things can get awkward fast. I've done my best to throw the ball back in her court and let her know I'm not pressed to see her as I work 2 jobs and my schedule isn't that free. It's filled with other dates, gym, studying etc.
