Insulin responds to food

Does anyone has a link to a study or book that explains the body insulin responds as reaction to food we eat. I recently read that blood sugar makes up only 26% of the insulin responds and that would leave 74% for us to figure out. I read that artificial sugar cause big spikes.. I would love to learn more on that subject.
