Flexible brewer for 1-8 cups?

Right now I use an Aeropress for brewing coffee for 1-2 people and a french press that I can brew coffee up to 1000ml. I usually like 60g/1000ml ratios. Right now I want to up my arsenal and experiment with pour over coffee 😄

I’ve been looking for a pour over that works for 1-4 people, about 250-1000ml of brewed coffee. Is the best option to buy a Chemex or is it possible to use a v60 03 or any other larger pour over to brew larger batches? Can’t really find any guides/recipes for brewing larger batches for the v60, Kalita, origami etc.
