Best route for short-term rentals in foreign countries?

I'm starting to toy with the idea of being nomadic for a month or two at the beginning of 2024. I know, it's early to look but it'll affect my leasing situation so I need to have at least have a bit of a plan. That being said, are there any good websites or tools for short-term rentals besides Airbnb? Looking for something a bit more cost appropriate, but I'd like a bit more stability than a hostel.

More than likely, I'd like to be in Ireland/Scotland for a majority, but also potentially France. TIA!
