How can I achieve a sound more like this?

Mike Bereal is one of my top gospel players when it comes to hyms. His harmonic choices are interesting.

What are some approach to these interesting voicings, runs and substitutions, theory wise.

Nonetheless, what other jazz musicians should I be studying to achieve a similar yet unique sound similar to this I can make my own.
