Vietnam Homestay or Farm Tour

Me and my partner are looking to go to north Vietnam end of the year and were wanting to stay in the countryside or farmland for a couple of nights.

Does anyone have any experience doing a tour or homestay and are they easy to cater to vegans or are there vegan-specific options? We are going around Hanoi, Sapa, Ninh binh.
