Here's my part list

I already have the RAM, graphics card, and PSU. My existing PSU is dying on me. I ordered a replacement, but it came DOA and the frustration caused me to upgrade. I might want to pick up a better graphics card but I am going to let my 3070 stay for now. So, the new to me parts in here are the CPU, mobo, case, and m2 drive.

Is there anything wrong with this setup? I don't game as much as I used to. I primarily play Destiny 2 and an occasional new release with friends.

Those are some solid choices. You went hardcore so nothing much to change here.

However if you want to upgrade the CPU in 2-3 years then I would suggest sacrificing the RAMs and going for a Ryzen 7900x build. See if this works for you.

CPU - More powerful and upgradable for similar cost. Go for the 7700 or 7700x to save $100 and offset the cost of the new memory kit.

Cooler - Just as good.

Board - Tomahawks are solid boards.

RAM - 32GB DDR5 kit running at 6000MT/s CL32 speed.

SSD - Slightly slower at 5GB/s speed but twice the capacity for $25 more.

Assume you have a spare 120mm fan for the rear exhaust of the case.

Solid build. Don't blame you for sticking with the 3070. Plenty of better ways to use $1000.

Like other person said, could go the AM5 R7-7700 route and easily upgrade the CPU in 3-5 years. Love my Ryzen system. Built it with a R5-2600 4 years ago. Just updated the BIOS and upgraded to a 5800X3D. It's a beautiful thing.
