Need advice on clay drying process when away from the studio

:snoo_shrug: Question! :snoo_shrug:

I recently started going to an open pottery studio and I'm interested in trying out throwing on the wheel and making pots. However, the studio is small and is only open Wednesdays and Saturdays. so I wont be able to monitor my clay's drying process. I believe I need to wait for the clay to reach the leather hard stage before I can trim it, but I'm not sure how to ensure that it's at the right moisture level when I return to the studio. Any advice or tips in general would be awesome. Thank you!
