Blue Bottle Opascope questions
My normal bean is Blue Bottle 17ft Ceiling. I’m trying a bag of Opascope and am surprised at the changes I’ve had to make to my brew process. Want to do a sanity check to see if I’m missing something.
First, the hardware: Breville Infuser, PID set to +4 Breville SGP Manual shot control with 5” of pre-infusion from first drop
For 17ft Ceiling, I had the grinder set to 16 for 9.4”. For a single shot I used 9.7 in, 28 out, about 30” total. It made a nice shot at the classic Italian ratio.
For Opascope, the initial grind gave me over 12g gross and it choked the Infuser. I’ve had to open the grinder to 23 and drop the grind time to about 8”. I cut the dose to about 9.4-9.5. All that brought the brew time back down to 33-35”.
Now the shot is no longer sour. However, the initial flow isn’t viscous the way 17ft Ceiling was, and the mouth feel isn’t as velvety.
So that’s my story. I’m shocked at how different the recipe is for Opascope, which makes me wonder if I’m missing something. Any advice?
