looking for a good show

So I'm not an Anime fan persay, I'm a 30 yo dad, but I grew up with dragonball, and bleach. Lately watched sword of the stranger and loved it, same with cowboy bebop.

One of my peeves that makes shows unwatchable is filling time up with pointless dialogue (Dragonball being the main offender, though I still love it for nostalgia sake), I like how cowboy bebop just uses the silence and does some visual storytelling in its place, in fact it's what I appreciate most about it.

So, anyone have any suggestions that fit the tone of those two? Much appreciated 👍.
