Poutine Virgin

OK still recovering from the fact that my predictive text almost made me post the title 'Pouting Virgin' but let's move on. I am keen to have a go at making Poutine but I am conscious that in circumstances like this, texture is everything. So my question is, how would you describe perfect Poutine cheese curds.?
