How do bluetooth adapters work for connecting controllers?

I built my pc a while ago but i opted out of including the bluetooth and wifi thing in the motherboard but I really wanna be able to use my wireless headsets and controllers so I bought a dongle a while ago but it sucks. Im starting to realize that not all bluetooth dongles are created equally and I need to know whats the best things to look for in purchasing a GREAT bluetooth dongle for minimal latency with controllers and good range for headsets.
