Question about pans to use at home

So, I'm getting my GCC in about 3 weeks, and I'm prepping my home to ensure her safety and health. I think i need to replace most of my pans due to nonstick. I'm looking at the store and see stainless steel, which i think should be okay, but what about the ones that say pfas/pfoa free? Or the diamond coated? Well my cast iron be an issue? Is it okay if i move to ceramic? I've seen so much on my research journey that I'm just confused about what's okay and what's not at the moment. At home my pans are red copper
