What level and armor should I use for Rada/Beast

I currently have a bleed build. I've used bleed the entire game. I know bleed doesn't affect either of them, but I'm just trying to wing it I guess? Currently I have the Ronin armor set, I'm using the Rivers of Blood katana +10, and I'm level 120. I have 3 larval tears, should I try a different build, and then swap back before NG+? If so, what build do you recommend, I'm not very good at incantations, so I don't know what's best. I don't use incantations right now either. Should I? What would be best for my Bleed Build?
