Aside from Kakimori Inkstand, are there other workshops in Japan where you can create your own ink?

I found out about the Kakimori Inkstand Workshop but unfortunately they're only open on weekends which is conflicting with my travel itinerary, so I'm trying to find out what other workshops are out there.

I see a lot of Japan travel posts here from fellow FP and ink enthusiasts so I'm looking to see if anyone here knows of places in Japan, specifically Kyoto and Tokyo, that offers workshops where you can spend some time to mix your own ink colour?
