The Baci di Gama recipe made me think of these that I usually only make in December for sharing. They have ricotta in them and I've used hazelnuts or almonds and even fudged the measurements (I don't have a kitchen scale) and had good luck. Polvorones are crazy good in my book. I remember I mostly used arrowroot starch for the "flour" portion and part butter and part shortening when I made these and they were so melt in your mouth. I also use half almond flour and half arrowroot when I make these gingerbread cookies, roll them out and make LEGO gingerbread men and women with my son.
