How can I cut photos into shapes?

That was a horribly worded question, but my brain can't come up with anything better at the moment. So some examples may help. I took this photo and made it into this photo. However, I am pretty sure I did it the hard way. Can someone tell me the easiest way to cut photos into shapes? I would like to do this with shapes other than circles as well.
