EVE + new computer + monitor layout questions.

So I am finally going to invest in a real computer that can handle eve instead of my crappy laptop and I could use all your inputs. I plan on building/buying a comp to run a 3 monitor setup and running either 2 or 3 clients of eve. As far as monitor setups go, I really like the portrait-landscape-portrait layout similar to this http://i.imgur.com/jUHzz.jpg, but seeing as that cost about 2g USD, I will probably settle for something similar to http://i.imgur.com/Tn5ja.jpg or http://i.imgur.com/vRD0K.jpg. My question is, how do you guys run multiple clients and what screen orientation do you find works better. Pics much appreciated!
