I want to fold Kamiya Satoshi's Phoenix, what paper would you suggest I use?

I've folded quite a few models including some of Kamiya's smaller models like Yellow Bird, the Eagle Ray or the Pegasus but I want to try a larger project. This will be my first model on that scale so I'm not sure what to look for in a large sheet of paper or even how large the paper should be.
