EV Training Question. Please Answer.

Okay. So I'm training a Sigilyph and a Gavantula for Spc Attack. What I was wondering was can I just keep killing Litwicks, basically forever, not having to worry that it'll fuck up my EVs considering you can only get 255 in one stat? So I could kill 260 of them, and then kill 130 basculin and have near perfect EVs? (besides that one that I lose from not having 252-252-6.)
