Why can't women be priests?

Can someone explain this to me? I've heard the argument that it's because Jesus came to Earth as a man not a woman, but if that's the case, why are we only discriminating on gender? Jesus was most likely Middle Eastern and yet there are many Caucasian and Black priests. Why do Christians discriminate by gender but not race or anything else?
