What is a realistic level of precision in wood?

What are your thoughts on precision in woodworking? People like Pat Warner can mill stock to 1 mil tolerances link but it seems like the minute the humidity changes the joint won't fit. If you want that kind of precision, why not work with metal or plastics rather than wood?
