Ballarat to Dubbo and back

Hi. We’re travelling Ballarat to Echuca, Echuca to Albury, Albury to Dubbo, Dubbo to Wagga Wagga and then back home. 2 nights in each spot. Main attraction is the Dubbo zoo. Dragging our 2 year old along (wish me luck!) We’ll do a Murray boat cruise in Echuca but not sure what else we should add to the list? Any suggestions on what else we should add as must sees in these areas?
