People who create environment design / art, do you model all of your assets from scratch?

I've been wondering especially about vegetation, stones and generally assets that aren't the main focus of the scene. I kind of would like to be that kind of person who does everything from scratch but then again there are so many great free to use assets and some addons that speed up the process a lot. I wonder how you guys feel about this and what are your opinions on doing either?
