MacBook Pro and Apple Watch ultra replacing iPhone?

Could the MacBook pro m2/ MacBook air with a Apple Watch ultra be your only devices?

Looking to replace my iPhone with the Apple Watch ultra (cellular) and m2 macbook, paired with a always on, cellular hotspot. anyone done this/doing this? I was also looking at a MacBook air to do It with if it would have been more viable
