Flair 58 + Comandante Mk4 need help

I just got into espresso. And I can’t seem to pull a great shot.

I am using 5 clicks 18gm 45 out in 30 seconds. I barely got to 7 bars. (Tried to do pre-infusion, but felt like water would just pass through)

The coffee is 1 month old.

The shots taste sour, almost no crema.

Should I grind even finer? All the googling tells me 10-15 clicks is espresso.

Please help.
