Backpacking clothing choice

I am going backpacking to Portugal, Spain and France for 2 weeks this December. Would it be enough if I bring 2 sweaters and 1 sweatshirt for the trip? I am not planning to was the sweaters and will wear undershirts under all of them.

• Any tips on avoiding pickpockets? I am from a country where pickpockets are very rare and I would never look like a local since I'm Asian.
