Sorry if someone’s already asked this! About the Romances…

I got to the part where you can choose to lock in you romance path…does anyone know if, if you choose to not lock anyone in do you still get the option to explore multiple paths or are you locked out of everyone’s romance? I want to choose Malbonte but honestly need more time to get to know Astaroth and especially Hunger because I feel we don’t have enough with him yet.
