Breed recs

I currently have a labrador SDiT for a program, looking for a personal SD for allergy detection in the future (4-5 years from now). My main issue with my lab pup is that he's extremely overexciteable.

Looking for a more owner focused, dog neutral, human neutral breed. Ideally this dog will do well with PA, but PA is NOT A NECESSITY for me as dog can do allergy detection at home and I rarely eat out (hence why I'm willing to stray from fab 4).

A dog sub suggested spaniels, setters, maybe sighthounds, I'd like to know if anyone has experience working with breeds in these groups and could offer specific recommendations. I'm looking to find an ethical breeder hence the 4-5 year time estimate.

Things I like about labs: very biddable and eager to please, food motivated, adaptable energy (content to go on short walks when I'm not feeling well, but also could walk for hours).

Things I don't like: overexciteable, our main issue at this point in time is reactivity to people and dogs (just excitement, not aggression). As an aside, if anyone has tips on how to deal with this best they would be very welcome!
