Disgusting shots

I bought a flair pro 2 a couple of months ago. Despite my attempts to dial it in i almost always get horrible gross shots.

I got a pretty good flow rate. I assume the problem Is the horrible temperature control luck I've been having. Sometimes I pull a shot and it's 170f on the temp strip on my brewhead by the time the shots pulling and sometimes it 200f. I find the preheat process to be HORRIBLE!

I'm seriously considering selling my pro 2 and just waiting till I can afford the 58 but I first wanted to ask here and see if there was a factor other than temp I'm missing? I usually shoot for 18 in to 50 out in 30-40 seconds. My shots seem very similar to what I see online so the temperature seems like the obvious issue.

I imagine the preheating of the flair 58 would make this much easier but I would hate to upgrade and have the same problem of crappy shots.
