Looking to purchase a F-150 for towing

In the market for a new-used truck and I’m debating on an F-150. I don’t tow often but do pull a 18’ steel frame, wood deck car hauler with an older Jeep a few times a year. Typically go 3 hours towing, but looking at doing some longer 6 hour trips in the future. I haven’t weighted the rig yet but I’m guessing the trailer fully loaded is around 6500-7000lbs with fuel and gear in the Jeep.

I’ve seen a lot of ‘15-‘20 trucks for sale with the 2.7 and it looks like those can pull around 8K? Has anyone had experience with these power trains and how well they pull? Coming from a V8 Chevy engine I’m hesitant stepping down to a V6 but these new engines sure make a lot of power. Would I be better off looking for a 3.5 or even a 5.0?

Advise appreciated!
