Plot structure for a harem story. NOT the kind you’re probably thinking of.

And by that I mean the Mc (usually a male) that has fallen some parallel anime world where every living woman is desperate to bang him.

I’m writing a historical romance story about a concubine that rises the ranks of the Shah’s harem after being captured and sold into it. There is also an overall plot about a cult wanting to release an ancient snake shouldered demon king (it’s based on Persian mythology and takes place in the Sassanid era)

It’s also also a Cyoa basically the reader decides what happens as the story plays out including who she ends up with. How do I structure multiple romances in a settings where you’re basically only supposed to have one? The women in the Sassanid dynasty had ample freedom so it wouldn’t be too ridiculous to suggest the Mc interacting with other people. Any tips or advice on how to handle multiple romance options is appreciated.
