A’jak’nir Jeera/Vendor question

I’m working on an honor mode run and looking to get the knife of the undermountain king for a Crit-fishing sorlock build. I don’t have the money to buy that AND gloves of dexterity, so I wanted to see if there’s a way to know what items can be potted from vendors if you kill them. I don’t think it would be their whole inventory because that could be excessive, but would I be safe killing them and looting after the inquisitor fight? Otherwise, anyone know how I can get a whole lotta money easily? On console.
