Should Upgrade to ONE UI 6.0

I got a s21 fe Exynos variant, i was thinking in upgrade but dont know what has this update or if it has bad things.

Also the update notification dont have arrived to my phone, so i will download a stock rom and install it in my phone. What country should i have to get??
