Could I have more than 10 characters if I just had 2 save files?

To be a tad more specific, if I were to take my darksouls save file and copy/paste it on my desktop ( or anywhere else ) and then delete all my characters. Could 1 make 10 new ones and then just switch the 2 files when ever I wanted to play on a character on either of the files? From what I can tell it seems like this would work but I thought I would ask here just to be safe.
