Vinegar as a Cocktail Ingredient

I just received a cool bottle of Noble's Tonic 03 maple matured sherry bourbon oak vinegar as a gift and wanted to solicit some mixing ideas. I've tried Pok Pok (sp?) drinking vinegar in a cocktail earlier this week so I can already tell that I like where this is heading ...
