So I want to open a brewery. My story is a little different, as I want to be a brewery OWNER and not necessarily a brewer. Advice?
I've never brewed anything before in my life. I'm looking to start getting into the hoomebrewing hobby to gain some beer experience, just because I think that would be a good thing to do.
My drive to open a brewery comes from my family. My family used to own a very successful brewery in the 1900's, but it unfortunately crumbled in prohibition. I want to start the family business back up again.
I would either be based in Amsterdam or Philadelphia (depending on what happens with my schooling).
I know a brewery is a capital intensive venture, I'm hoping to get a six figure investment from my grandparents (grandfather's father or grandfather owned the original brewery). If I could show a bank that I had say 200K-500K of funding, would that encourage them to lend me some money too (assuming my business plan, which I haven't written yet, was solid and such)? How can I demonstrate that I'm a good investment to them?
As far as the beer is concerned, I'm reaching out to some of my family members to see if it's possible to locate some of the original recipes.
Regardless of whether or not finding the original recipes pans out, my plan is to get involved with my local home brew scene and try to find someone I trust to approach about possibly being my head brewer. In addition, I'd take resumes from outside people who would want the position. The problem is that this isn't an existing brewery, and I'm worried that applicants wouldn't be too keen on partnering with me and helping develop a brewing process while the brewery is being set up. I just figure it wouldn't hurt to try.. Would experienced brewers be interested in an opportunity like this? To play a key role in the development of an organization?
Obviously I need to make sure whoever I wind up picking knows their stuff, I have some beer snobby friends I trust to give me their opinions on the prospective brew master's stuff.
Would it possibly be better to set up the brewery (buildings equipment, etc.) Before putting it an open call for a brew master? My major concern is there's a huge possibility I wouldn't know what types of beer I'd be brewing (in the event I can't find any or enough of my family's original stuff) and I don't want to be buying equipment without that. Also, I would want the brew master's input on the equipment, because I really have no idea what he needs/wants/is experienced with (I'll obviously be doing research on this between then and now).
If anyone could offer me any advice or resources on any of these questions, it would be much appreciated.
Also, does anyone know any resources mi could check to try finding out about these beer recipes? One brewery was in Brooklyn, I don't know if the state kept any kinds of records about those kinds of things.
