Does Jerkey from a meat market have carbs?

I buy my Jerkey from a small town meat market in Marion Texas called penshorns, on the off chance anyone has had a personal experience with it. I have read that most store-bought jerkey does have carbs. My question is does fresh jerkey straight from a Meat Market have them as well?
