Need help with a recipe

I have just started making my own mead I made one with a kit and now I’m trying one off what I learned from it. I bought some EC1118 and I have several pounds of peaches and blueberries. I have seen mixed signals about EC1118 from some people hailing it to others warning that they couldn’t stop the fermentation. I guess I’m really just looking for a safe recipe or way of making this that won’t make it explode. I have airlocks and Star San and potassium sorbate. I have most everything I need from what I have read from others but I just want more experienced inputs. Thank y’all.
