Amd or intel for gaming and video editing?

Building a new pc, I’m gonna be using it for gaming and video editing, they’re both equally as important. Im trying to save money by going with a micro center bundle. Im stuck between choosing the 7800x3d bundle or the 12900k bundle. Im gonna be swapping out motherboards (they allow you to but the motherboard wont be discounted, which is fine) as i don’t trust the standard asus ones due to RMA, which bundle should i go with? And what kind of motherboard?
