When to harvest sweet potatoes in central NC?

I am growing sweet potatoes for the first time (Okinawan) and I am so excited/nervous. When do I know its time to harvest? I have searched the internet and have gotten conflicting ideas (wait until leaves turn, harvest in 90 days, harvest in 180 days). I figured I'd ask the experts here. Thanks!
