Multi-Screen via Dex

I currently have the Viture Pro XR glasses (which have been amazing). I use it to replace the portable monitor I used to carry with my laptop to replicate the three screens I have in the office, but the glasses with the app have allowed me to lighten my bag. My question is taking it to another level and eliminating the laptop altogether. Because I use an Azure Virtual Desktop as my work computer, I can access it via the RD App. Can more than one screen show up as an available option?

I have a Samsung ZFold 6 Android Device and a USB-C Dongle to charge the phone and the glasses. I have a Bluetooth keyboard/mouse that works with the setup, but having the extra screen would allow me to possibly not need to carry a laptop on my lighter workdays out of the office.
