Multitasking and gaming cpu??

So I know the 7800x3d is the go to currently but if I want to sacrifice some performance to aim more towards some editing streaming multitasking and get a cpu with more cores would the 7900x be a bad call or just save for the 7950x or could I go with a 13900k but I heard intel isn’t doing well right with random crashes I heard the 7900x is similar gaming performance to the 7600x which I don’t know if that will bottle neck a 4080 with more cpu heavy games. The most intense game I would be playing is star citizen and I play God of war, cyberpunk, apex, cod, and siege need some help
