How the hell do you beat the Champion/Legendary AI in FC25?

I'm an okay-ish player who could beat the Champion level AI in FC 24 (switching to Pro only for like 88-rated teams) but I just cannot create chances against the champion ai in squad battles in FC 25.

I just struggle to get anywhere near their goal, they are super good at defending and just re-gain possession straight away.

Any tips on how to beat it consistently in champion/legendary?
