Legitimate uses of AI in the workplace

Im curious how others are using AI in the workplace.. either yourselves for your own work, or the company in general. Besides the obvious "write me a powershell script" have you found daily uses for it to make yourself or your company more productive? I've used it a few times to help with creating documents.

We have a large amount of data on our file server and Im curious how we could potentially use AI to utilize it better.. have folks been building their own LLMs on prem?

Im asking beyond just the sys-admin realm.
