When should I bake my cookies I'll be gifting family 12/21

I'm planning on making a cookie box and we will be celebrating our family Christmas on 12/21. I've never made one before, but i do have experience working in a cookie shop and baking at home. I'm just confused on when to start making them! How long will they be good for? Do i just make them all the day before? What about storing?
