Why do hunters use blood to heal, knowing it will just turn them into the same beasts that they hunt?

I’m replaying this game a few years later and actually attempting to understand some lore better- No matter what I’ve tried to research, this part doesn’t make sense to me. Why would the church send hunters to fight beasts, using the same blood that turns people into beasts. It seems like a pointless, endless cycle to do so? I just can’t figure it out really. I’m still not super well versed on all the lore yet but this has been bothering me haha.
