What do I do against Bobbys (Bobbies?), they’re like the toughest things I’ve seen so far

Felt like I mastered the first game but oh my god I'm completely stumped at what to do against these guys.

Two at once (not in the fight but they chase me down together), no way to sneak past I think. Assuming more will appear later.

They regenerate limbs, they have a spinny head, they beat me to death lickety-split, and the one time I beat one it just popped back up a few seconds later.

I just have Levi, is this an enemy where you kinda need multiple people otherwise you're screwed? Is there a pattern I'm missing? Are they night time only? Feel like elite guards were easier than these guys.

Been stuck for a while.
