Suggestions for rear entertainment system?

New owner of a 2025 Honda Odyssey Touring and I’m trying to figure out the best device to set up for the rear entertainment system. Options I’m currently entertaining: 1.) Google chromecast: would need to cast content from a live phone (so me or my wife) and use our phone’s data plan. Or do the At&T connected vehicle thing to make the car a hotspot. 2.) Amazon fire stick: won’t need a phone but same connectivity issues as #1 above. 3.) just get a USBC-to-HDMI (or lightning-to-HDMI) connector and play whatever downloaded video content we have on an iPad or iPhone

Any other suggestions? I’ve seen some posts with crazy setups using plex servers and routers, etc. I don’t know if I’m up for such a larger endeavor, but open to any and all ideas. Thank you.
