How to truly enjoy...?

I started playing after ages of not playing. I want to build a beautiful base with amazing scenery and a big farm for everything, fitting an overgrown theme. I'm far from it though, haven't even seen a diamond yet. It just feels like a pointless grind. How can I truly enjoy it until I kill ender dragon +get elytra + start to build farms and stuff?
